A few months ago, I started making these yummy little muffins when I went through an experimental baking phase. I found several muffin recipes on Pinterest and messed around with them until I got exactly what I wanted in a muffin. Here’s what I came up with.
What You’ll Need
These muffins are so easy to whip up in a flash. You’ll need measuring cups and spoons, 2 regular size muffin tins, and a large mixing bowl. I also use muffin tin liners and an ice cream scoop (for scooping out the batter).
Here’s all the ingredients you’ll need for the yummy treats. I add my wet ingredients first and then my dry ones.
- 2 eggs
- 2 teaspoons of vanilla extract
- 1 cup vanilla greek yogurt
- 2-3 medium mashed bananas
- 4 tablespoons of soft butter (NOT margarine)
- ½ cup white sugar
- ½ cup brown sugar
- ¼ teaspoon of salt
- 1 ½ teaspoons of baking powder
- ½ teaspoons of baking soda
- 1 ¼ cup whole wheat flour
- 1 cup white flour
- Chocolate chips – 1 cup (or 2, or hey, this looks good!)
First, I preheat the oven to 350 degrees and line my regular-size muffin tins with liners. If you’re not using liners, I recommend using some non-stick spray. I use olive oil spray. I found that although the batter has butter, the muffins still stick to the liners. Then, I get my bowl and start putting stuff in.
Whisk together your white sugar, brown sugar, and other wet ingredients until they’re combined. The bananas will be a bit chunky. That’s ok! They won’t be that way after they’ve baked.
Add your dry ingredients one by one (minus the chocolate chips) and mix them all together. You’ll notice the batter gets heavier as you go. Then, add the chocolate chips and mix it all up.
Using an ice cream scoop (or ¼ cup measuring cup), fill the muffin tips one by one. I usually end up with about 18 muffins.
*Quick tip – fill the empty muffin tins with water so your pan doesn’t burn!!
Bake the muffins for 15-20 minutes. In my oven, I bake them for a full 20 minutes. At 18 minutes, they seemed a bit gooey. Just use a cake tester or toothpick to check them. Let them cool for a few minutes and enjoy! They keep for about 4 days in an airtight container.
